Smash the Banana until almost paste-like.
Add in the Eggs* and quickly mix until yolks are broken and fully incorporated.
Stir in the Oats.
Mix in the Cinnamon and Salt.
Heat your skillet to medium-high and add a tsp. or so of coconut oil, or enough to lightly coat the pan.
Add ¼ cup of mixture to the skillet for each pancake. You can cook multiple at one time, just be sure to not overload the pan, as you need to leave room to flip them. Once the batter begins to bubble over the entire pancake, flip it. Cook for another 1-2 minutes, or until the bottom of the pancake is lightly browned. Since there is no flour, it is okay if they are not completely cooked through, depending on the desired consistency.
Place a smear of Coconut Oil on top of your pancakes, add a spoonful of Berries, and enjoy!
